This is for the wardens, administration, and kitchen staff at the Estelle Unit. This really applies to all units, but for my purpose now, it is meant for the Estelle unit.
Please stop wasting tens of thousands of dollars of fresh vegetables that are being grown around the system. We spend a $100K/yr on producing fresh garden vegetables to help feed the bosses and inmates w/in out system, only to be thrown into the trash or slop wagon to be thrown away. The vegetables are good when they come in through the back gate and enter the kitchen. Then they set there unattended on the back dock, in a hall way, or in a cooler ruining.
I feel this is due mostly to the incompetent kitchen staff we hire today that cant flip a burger at home for a family let alone cook for thousands a day. If its doesn't come from a can or frozen box, the kitchen staff cant cook it. The choose only to let it waste and ruin because "the menu is already picked for us". Once they have time to get to it, it has to been thrown out. TDC staff as a whole seems to disregard waste at the taxpayers expense because it isn't theirs, but in reality, the staff ARE paying for it.
If the staff is so incompetent that they cant clean, process, and cook fresh vegetables, then send the veggies to a shelter or school. Or how about this, let the bosses that can cook and need the food for their home, grab a arm full on the way out of the front gate going home.
I am seeing slop wagons and trash cans daily go out the back gate to be thrown away or fed to the hogs. Completely full wagons of fresh potatoes, corn, greens, dry rice, beans/peas, onions, cabbage, etc. You name it, it's being thrown away.
This is such a disgraceful and sad waste of vital resources and only shows the lack of attention, care and concern the administration is giving the kitchen, it's inventory, and it's back gate. If I can see this only a few days a week I am here, then you should be seeing it all the time.
